Wine Making

	Catarina Vieira & Pedro Ribeiro	Manual harvest into 12 kg boxes, on the 1st of September for Aragonez, 3rd of September for Touriga Nacional and on the 14th of September for Alicante Bouschet. After a short period inside the refrigeration chamber, the grapes underwent careful selection on a vibrating sorting table before destemming with a slight crushing of the berries. The fermentation occured in co-fermentation, in frenck oak barrels, at a controlled temperature, for a period of 12 days
