Founded in 1955, the Adega Coop. de Borba, was the first of a series of Cooperatives settled in the Alentejo region, promoted and helped by the "Junta Nacional do Vinho" a public organization that controlled and supervised the wine production in Portugal, at a time in which the wine production didn't carry much weight in the region. This action allowed the creation of a commercial and productive organization for the Alentejo wines, otherwise the vine culture could have completely disappear because all the existence incentives at that time were for the production of cereals in order to transform Alentejo in "the granary" of Portugal.   To celebrate worthy its 50 years, the Adega Cooperativa de Borba created this special wine with the final selection of the best wines from this vintage. After a selection of some vineyards with the best conditions, a very rigorous control of production per hectare and of maturation of each variety, the grapes were harvested and came to the Adega (winery) in small boxes. All the vinification process occurred with separation of the grape varieties. In the winery, the grapes were immediately crushed, but only partially separated from their rachis. The alcoholic fermentation occurred with a prolonged contact with the skins for 15 days to extract all aromatic and gustative details of the fruit. To complete this extraction a process of skins contact occurred after the alcoholic fermentation for 21 days, before the malolactic fermentation. Then, the three best wines were selected and blended. Finally, the final blend matured for 12 months in new French and American oaken casks and then reposed for 24 months in bottle.
